Autumn brings with it an onslaught of apples, pears and grapes, while summer is prime time for stone fruits like cherries, apricots and plums. Of these latter fruits, plums are the sturdiest and have the longest shelf life, making them ideal for preserving as wine.

    The process of making plum wine is essentially the same as making any other fruit wine, and the basic recipe is as follows:

    Ingredients:
    1 gallon boiling water
    1½ lbs. sugar
    1 lb. ripe plums, pitted and chopped
    1 Campden tablet
    1 pkt. Montrachet wine yeast

    Directions:
    1. Sanitize all equipment that will come into contact with the wine. This includes a primary fermentation vessel, airlock, siphoning hose and bottles.
    2. In the primary fermentation vessel, dissolve the sugar in boiling water.
    3. Add the plums and crush gently with a potato masher.
    4. Add the Campden tablet to the must and stir well.
    5. Fit the airlock onto the vessel and allow the must to cool to room temperature.
    6. Once the must has cooled, add the Montrachet yeast and stir well.
    7. Allow the must to ferment for 7-10 days, or until the bubbling action in the airlock has slowed.
    8. Siphon the wine into a clean secondary fermentation vessel, being careful to leave the sediment behind.
    9. Fit the airlock onto the secondary vessel and allow the wine to age for at least 3 months.
    10. After 3 months, siphon the wine into bottles, being careful once again to leave the sediment behind. Cork the bottles and store in a cool, dark place.
